Dear Jonathan,
1. Probes cannot be grouped in the normal device tree. You can however of course 'try' to build a Library representing the order you'd like to have with the Remote Probes under one certain node.
2. Probes can be deleted like any other object in the device tree, only that the Probe-"Group" needs to be deleted (Right-click on it->"Delete"), it's not possible to delete the "Probe Device"-only.
