Is there even any way of splitting that into different, more detailed channels?
The goal is somehow to monitor and to avoid any P2P sharing, downloading from sharing websites.

this can only be done by using Custom Netflow Sensors, which have the 'standard' protocol definitions, plus custom definitions.
