A single "server" can execute about 10.000 sensors - assuming it is kind of up to date hardware (vm as well).
Sensors - well - you can have one device and hundreds of sensors on it - or hundreds of devices and a handful sensors per device..
It all depends on what you want to see...
As for you second question - this would relate to maps - but you don't specify what you want to do. It is possible to rotate maps - there are various ways to accomplish this.
