We've had problems in the past with Linux systems which have caused the systems file systems to go to read-only mode. I want to monitor and send an alarm when this happens again but can't find any sensor for PRTG that supports this.

Regarding what you desire to achieve, I'm afraid that there is no native sensor for it. However, you can use the SSH Script or SSH Script Advanced sensor with a small script on your device(s) to get and monitor that information.
