I'd like to be able to run a report that lists every sensor we have configured with who is being notified when an issue arises.

I'm afraid that it's not possible to list all sensors and the belonging notifications for every sensor using the reports of PRTG, sorry. Nevertheless, you can navigate to "Setup > Account Settings > Notifications" and click on the "Used by" button on the right to display all objects.

Thanks. Hopefully this is something soon that can be added. Seems like a very simple report that can be done from the database that holds the information. Lots of good uses for it as well.
